How to make a deliciously 'mellow' coconut cake... Pre-heat the oven at 180°C Melt the butter gently (I personally use the microwave for this), add in the rhum and leave to cool. In a bowl, mix the coconut, plain flour, raising agent and sugar . Add in the whole eggs and stir well, then blend in the yoghurt and the rhum-flavoured butter (at this point already, the mixture is finger-licking good!). Grease the oven dish and pour in the mixture, bake for approx. 20mn. Check to see if cake is appropriately browned... Sprinkle it with grated coconut and/or multicoloured hundreds and thousands. Serve it lukewarm or cool, with melted dark chocolate or/and a scoop of passion fruit ice-cream. Of course, you should be drinking rhum cocktails... |
